If you slow it down you'll see he already has a coin in his hand. I'm guessing that two of the other coins are magnetised in such a way that when bumped into the air they will stick together. These two coins are probably slightly thinner than a normal coin so that when stuck together they don't look much bigger. Thus looking like only two coins are on the table.

theres a reason he had to have his hand blocking the camera, then when his hand doe move, the camera is inline with the table so you cant see it clearly.....

Th only thing I can think at the moment id that part of the desk is made of the impact stuff that when you hit it suddnely is hard, but when you press slowly on to it it behaves more like a jelly...
