Suggest me a route

I have 2/3 days to travel back from South East Portugal to Santander. Going down via autoroutes but want a leisurely journey back.

Any suggestions of good roads/scenery & decent towns to stay in please?

Its been a few years since I was down that way but when I was I travelled the coastal route and it was very good although we did cut the corner off and go straight to Lisbon because our weather was horrendous

If you were travelling up the coast from say Lisbon to Santander then the route on the coast would be about 600 miles which is very easy over 2/3 days
