There is a plethra of accommodation in France most if not all biker friendly and a good place to start is http://www.bike-stay.net which covers english speaking B&B, Camping and Hotels etc. or if you want to do cheap look for F1 hotels enroute to anywhere.
You can either do a tour ie ride to a new place each day or go to a single place and use it as a base for touring the area - they each have there pro's and con's. Everyone says head for the mountains but that is great if you like hairpin afyter hairpin with major drops either side if you get it wrong and the ride is usually quite technical so if you want a bit of everything try the Route Napoleon for instance Google it ;)

Whatever you decide you will have a great time but remember France is a Huge place and it can take a long time to get from one place to another due to the fact no road is streight ;) plan for no more than 300 miles a day average 250 miles which will be 8 hours in the saddle unless you do the A roads (Paege (Toll)) which you can cover ground quite swiftly to get to a particular place but perhaps not a bikers choice...
